Stirring your flour

I have a King Arthur Flour cookbook & they recomend that unless you are using freshly grounf flour you stir your flour before measuring it to add air to it to make it more fluffy & your baked goods will come out lighter & not heavier. Just thought I would pass info this along.

You know I will be doing it cause it does come packed tight out of the bags.

I store flour in a container and when transferring from the bag, I'm sure it gets stirred up. The container is refilled frequently.

I do whisk the flour and other dry ingredients once measured for muffins, breads, pancakes.......

I'm curious if this would measure out the same. Just might have to try it next time.

It settles & packs itself down while in the container. And when you pick it up & put it down it packs it down a little more.
