stuffed hot cherry peppers

Does anyone here know how to make those stuffed hot cherry peppers. The cherry peppers that are stuffed with proscuitto and cheese. I know I have to pressure can them since there is meat in them and cheese and I would have to add vinegar for acid.They are packed in oil. Thats as much as I know. My family loves them but they are sooo expensive around here and would like to try making them. I need to do this the right way for safet sake, so I am wondering if anyone else has made these.

Haven't heard of those stuffed peppers. I think that they are good by them selfs. Actually they do make a great hot sauce.

Oh man, you don't know what you are missing... you should try to get your hands on some. A little messy to eat though, since they are packed in olive oil and when you bite into one of those fat peppers it tends to be a little messy but well worth it.
Hopefully I can find a recipe. I have seen small jars of them sell for $10.00 and the larger for $20.00 and the store done the street sells them for a couple of bucks a piece.
I know how to make them but I am concerned about the canning part of it.

I know that you have to use a pressure canner to do meat but I have never done it because it makes me leery. You have to be careful when you do meat. I have thought about just making them straight out because I know they won't last long in our house but it would be nice to be able to make enough to can and have them for when you want to do antipasto platters.

This is the recipe I am looking for except it doesn't tell you how to can them. I think I am just going to make them and stick them in the frig anyway. I mean they are so easy to make it will take no time at all when I am in the mood to make them.

READY IN 1 Hr 25 Min
Original recipe yield 12 stuffed peppers

INGREDIENTS (Nutrition)
1 cup extra virgin olive oil
12 fresh cherry peppers
6 ounces sharp provolone cheese, cubed
6 ounces prosciutto, thinly sliced
1 teaspoon salt

DIRECTIONS
Slice the tops off of the cherry peppers and carefully remove the seeds, keeping peppers whole. Wrap a cube of cheese with prosciutto, and stuff into a pepper. If there is still room inside the pepper, stuff in more prosciutto. Repeat with remaining peppers.
Place all of the stuffed peppers into a 1 quart jar - or one that your peppers will all fit into, and sprinkle salt over them. Pour in enough olive oil to cover the peppers. Cover, and let stand for 1 hour before eating. Refrigerate leftovers.
