Yankee Pot Roast
Serves 6 to 8
3# roast - chuck is good, but whatever you have
1/4 tsp black pepper
1 tsp kosher or sea salt
1 c chopped onions
2 c. sliced celery
4 cloves sliced garlic
1 c sliced carrots
2 T vinegar
1 large can or 3 1/2 c diced tomatoes
2 to 4 cut up potatoes
Season the meat, Place in roasting pan or Dutch oven. Add veggies and vinegar. Cover and roast at 375 for approximately 2 to 2.5 hours.
