Yellow Maple Sap. Advice needed ASAP.

I have about 1 gallon of yellow maple sap. I know exactly which tree it came from but I am a little scared to use it. I am boiling all my sap I have been saving this past week right now and I am not sure if I should use the yellow sap or not? Will it ruin my whole maple syrup even when mixed with 1 1/2 gallon of clear sap?

I'd process it separately.

On the other hand, you might be better off throwing it out.

Yeah, don't mix it until you know it's okay because a little off sap and it WILL ruin your syrup. In my very limited experience, sap that has started to turn will smell yeasty. I'd let it sit in room temp for a few hours in a closed container and then smell it. If it smells okay, start cooking it down and make sure it doesn't start smelling yeasty in the process! It can start to look cloudy in the cook down process if it's off too. Good luck!
