Besides feeding to the chickens or composting, what can I do/make with apple peels/cores?

you can make low quality cider. low quality applesauce etc just cook the stuff down really well and strain out the seeds and other hard bits.

I think you can make ACV with them, which has lots of uses. I haven't done it yet myself, but I think there is a thread somewhere....

Use those peels for making Jelly!!! If you have pretty red apples, the jelly turns out a beautiful blush!! :D

Freeze some if you have the room....they make great chicken and sheep treats later on in the middle of winter.

Some folks juice them and make vinegar.

Sprinkle with cinnamon & sugar & dehydrate? These can be good people treats too, especially if you have kids. ;)

Dehydrate them until crisp, the put in grinder and powder them, you can then add to any type of tea or fruit drink, it taste great and adds extra fiber, you can also add powder to oatmeal and granola.
