Carrot Cake Jam

2 cups finely grated carrots
1 1/2 cups peeled chopped pears
1 (14 ounce) can crushed pineapple, undrained
3 tablespoons lemon juice
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/2 teaspoon clove
1/2 teaspoon cardamon
6 1/2 cups sugar
1 pkt Sure Gel powder
1 cup Orange Juice or Apple Juice

Put grated carrots in orange or apple juice. Add 1/2 cup water. Boil until beginning to get tender or liquid evaporates.


Mix everything BUT sugar and pectin in pan.

Bring to a boil.

Bring down to a simmer for 20 minutes, stirring every once in while.
Place mixture in blender and puree for 15 - 20 seconds. Return to pot.
***Check for spice flavors! Add more cinnamon or whatever your tastes desires. I added a dash or two more cinnamon and cardamon ****

Add pectin and bring to a boil.

Add sugar bring to a rolling boil.

Take off heat.

Fill hot sterile jars.

Put lids on.

Water bath for 10 minutes.

Oops, sorry forgot to add that.

I got 6 1/2 pint jars and 4 little 1/4 pt gift size jars from this recipe.

LOL!! I told him it's Carrot Cake Jam and I grew the cake myself!

I made a batch of this a couple of years ago and everyone has raved over this... I just got a request for more this week as well.. It is delicious!:)
