I had some Saturday and have been looking online for a recipe but some of the ones I found had Cabbage and a lot of thing I don't think are in the ones I tried at a home cooking resturant.

Here is one from my Complete Book of Pickles & Relishes

6 quarts green tomatoes (36 to 40 medium)
1/4 cup salt
1 1/2 quarts chopped onion
3 cups chopped green pepper
1 1/2 chopped red sweet pepper
3 cups sugar
1 1/2 quarts vinegar
2 tablespoons whole mixed pickle spices

Chop tomatoes, mix thoroughly with salt. Let stand overnight. Drain. Combine with chopped onions, green and red peppers, sugar and vinegar. Put spices loosely into a bag and place in tomato mixture. Bring to a boil. Boil gently with spices for 1 1/2 hours, or until thickened, stirring frequently. Remove spice bag. Pour relish into hot, sterile jars. Fill jars to top, and seal. Store in a cool, dry place. Makes 8 to 10 pints.

You might also look for piccalilli recipes, apparently they use green tomatoes. I found several in my pickling book after I already typed the one above up for you. :p
