This is how my 83 year old dad does it:

Chop cabbage and pack in jars. Put in 1 tsp. salt. Pour warm water to about 1" headspace. Hand tighten jars. Put in cool, dark place for about 6 weeks. You may want to put papers or a towel under jars as the kraut will "work" and might leak.

My dad's kraut is just the best, white and firm.

Oh, and :welcome
Than you Punkin, this is what I was looking for, Lynn

8 - 1/2 pints of peach preserves.
7 qts of spaghetti sauce. Yeah, I finally got enough ripe tomatoes for a full batch.

Punkin, really that is it for Kraut?? Holy cow that is easy. How long does it need to sit?

Also, is your refrigerator pickle recipe on for sweet pickles or dill?

It really is that easy. The kraut should be ready in about 6 wks to 2 months. (Dad's already snuck a jar of his ;) )

The fridge pickles don't have any dill in the recipe, but I'm sure you could include it during heating. I guess they are really more of a sweet pickle, but not too sweet.

Two and 1/4 pints + three 1/2 pints of Pickled Jalapenos
1 pint of home grown pickled Banana Peppers

About to make up a whole batch of sweet pickle relish. Its been marinating all day. What work! I need an electric large processor instead of this old fashioned hand crank one, I feel like I can arm wrestle hulk hogan now!!

18 pints of spaghetti sauce with beef and 28 half pints of meatloaf. Two of the meatloaves didn't seal, so guess what is for supper? :p
