What's for dinner?

Tonight is salmon, lima beans and herb flavored riced cauliflower...can't say that isn't healthy! I'm thinking salad tomorrow. I've got a craving for a chopped salad.
 
Just a stir fly with chunks of leftover pork, lots of pepper & onion. No biggie, just fast, tasty. Work outside most all day -- between the rain showers and thru a few.
 
Leftovers. Bill ate leftover meatloaf. I stared at all the veggies in the frig that needed to be used, so I'm making "Super Low Cal Healthy Creamy Vegetable Soup". Not sure it's going to be super low cal by the time I get done with it, but it's all good stuff. And it freezes well.
 
Stirfry is a tasty way to use veggies. I only ever use a little bit of sesame oil, chicken stock, and tamari (or soy sauce). I use a few drops of fish sauce mixed with the stock but it's not needed. Sesame seeds can be added in. Sometimes I use a little bit of cut up chicken, sometimes just the veggies. Low calorie and tasty plus you can eat enough to be full.

I've switched the chicken stock and meat for beef occasionally. I prefer chicken for it.

I like fresh veggies for it, but if I'm lazy and it's only me there is a nice frozen veggie mix at the store that works. Takes 10-15 minutes at most to cook.
 
Enough greens in the greenhouse for hubby and I to have our first salads: lettuce, spinach, lambs quarter's. Sloppy Joes! I also made iced tea today. Perfect summer day: about 68* all day long.
 
My night to cook. Rubens, smaller garden potatoes from last year and homebrew.
