Mashed Carrots

I think mashed carrots would be a good dish to use canned carrots. Overcooked would mash better.

I tried mashing in my stand mixer. The results were lumpy and slightly stringy.

I put that into my power blender (ninja) and needed to add water so its a bit soupy.

Its sitting now while I decide to heat and thicken or to call it soup.

cardamom is a very different taste, i would advise anyone to go light with it until they know how much they like (if any at all).

Have you discovered Tasting History? No actual recipes, but they show the preparation, and tell you where they found the recipes.

I miss roasted vegetables. We used to roast lamb with carrots, parsnips, and potatoes. Thanks for the great meal reminder to make this again, but when it gets colder out.

I left my wet mashed carrots in the fridge uncovered because, well, I was lazy. I added butter, salt and nutritional yeast. It's not terrible! DS6 liked it. He loves carrots, so no surprise. DH says it reminds him of baby food. It must need more salt then?

It was not the worst thing I've ever cooked.
