My father was at one time a VERY skilled welder and claims cast is a PITA and won't say much more about it other than it involves pre heating in some sort of oven and burying in sand when complete to allow slower more even cooling....and it is very time consuming.

If you are concerned about the cans possibly being toxic, you should also be worried about moisture. Try to get some mylar bags and O2 absorbers, then put a bag in each can, fill it with food, toss in an O2 absorber and seal the bag before putting the lid on the can.
I disagree. Sauerkraut and kimchi are basically preservation methods that are canning in it's simplest form and both have existed for far more than 200 years.
