To each his own.... my personal preference is that is way too much fat. I would be worried about it going rancid.
All my canning experience the past 3 generations says to skim off all the fat as possible before canning.

Was able to work around the saturated spots in the yard. Still couldn't access the raised beds, but did putter in the herb raised bed (some of it is coming back). Got another portion of the butterfly garden prepped, down to about a quarter of it left.
You want a goat 🐐. Lol. Can't remember if you still have intact males in your beef herd. That could be an issue, too.
Horns can be removed. My grandparents had a small dairy farm. Been decades since I milked a cow, I don't miss it at all.
