I opened a jar of home canned potatoes, added fresh zucchini, dried onions, dried spinach, some home canned corned beef hash, and a sprinkle of fake bacon. Simmered and then dropped 6 eggs into the mix. Covered and let simmer. YUMMY, with toast on the side!
At our Dept at the County Fair, we had a 42% increase in the number of jars entered, vs last year? Why?

I'd like to think that folks are canning and dehydrating and freeze drying anything they can get their hands on, at a sale or clearance price...
Zucchini casserole. Made up. Layered slices of large zuc with sauce mix of fresh tomatoes, can of garbanzos, dried onions, dried tomatoes, 2 home grown japanese eggplants, and spices. Middle layer was precooked sliced sausages and cheddar cheese. Now its in the oven on convection for an hour plus.
I made a beef dish the other day. Now typing this up, I cannot for the life of me remember the name. I'll have to come back later when I remember. But it was good, even tho I didn't have any adobo peppers in a can.
Gearing up for the County Fair has me working half of each day this week. Thats me, having a rest from the concrete floors. This year, our entries are up by 42%!!!! Last year we had 944 entries. This year, there are 1343 entries. Looks like canning is resurging in importance.
