the pacific northwest (USA), talks about the value of polyculture and
how he sold his dandelions for $900!

What part of the dandelions does he sell and HOW? Is it the root? or what?

Looks like Bait and Switch to Me, never said how or to who he sold his $900 dandellions. I have sold them cut young and tender at the Public Market in Rochester NY to second generation people from Italy. They were a favored salad green when they came from unsprayed ground.

I think he mentions the roots in the video.

I know that skeeter is a famous wildcrafter. So I would guess that he would sell something like 50 pounds at a time to different herb companies.
 
Dandyblend is a great coffee alternative from dandilion roots.I have thought about roasting the roots to make my own drink.

I know people are getting into saffron harvesting.

There was a book I got once at the library that listed herbs and the level of interest in them,so you could determine the money you could make growing them.
 
My ducks can eat $900 worth of dandelions in about 10 minutes :D
