I have some experience with growing ornamental plants and small nursery plants,

am thinking seriously about growing fruit trees,

old varieties,(non patented) would they be grown from seed or can you grow successfully from cuttings

also would like any good book suggestions

and supplier suggestions

Apples generally don't fruit true from seed. Usually scions are used.

The SSE membership catalog contains the most compared to the SSE commercial catalog.

I have access to an old variety "Wagner" that I will be grafting to rootstock. It is a pie apple.
I'd also like to find an old variety known as "banana" apples which really had a banana flavor.
