No, heat it up first (not just warm, *hot*).

Reason being, the processing time is based on the assumption the jar contents are already hot. If they aren't, it will take longer to get the INNERMOST INSIDE PARTS of the jar contents up to boiling temperature. Unless you are blessed with "x-ray thermometer vision" as your personal superpower LOL, you will not know how MUCH longer this will take. Thus it is quite likely you would end up under-processing.

I got it back to simmering and then put it in the jars. I was actually aiming for warm, but by the time I had my gear ready (jars/lids/rings washed and warmed, canner going too), it was simmering, so all is well.
