Apple Ring Cake

The kids helped me make this today and it was wonderful! So good with a hot cup of coffee (or tea).


7 apples, like Jonathan or granny smith
1 1/2 cups oil
2 cups sugar
3 eggs
3 cups flour
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon cinnamon
1 teaspoon vanilla
1 cup chopped nuts
1 cup raisins

1. Preheat oven to 350 degrees. Grease a 9 inch tube pan

2. Peel, quarter, and thinly slice all of the apples.

3. With an electric mixer, beat the oil and sugar together until blended. Add the eggs and vanilla continue beating until creamy.

4. Sift together the flour, salt, and baking soda (if using self rising flour omit the salt and baking soda) with the cinammon and fold flour mixture into the egg mixture.

5. Stir in the apples, nuts, and raisins.

6. Pour mixture into the pan and bake until cake springs back lightly when touched (about 1 hr 15 minutes). Let stand 15 minutes in the pan and then transfer to a cooling rack.

I couldn't wait until it cooled to eat some so it didn't slice as nicely as it would have it had been cooled all the way. :hide

I used walnuts this time but next time I may use pecans and cranberries instead raisins. This would be killer for breakfast!!!
