Argentinean Fruit Salad
Serves 8 to 10
2 med oranges, peeled & sectioned
2 med apples, cored and cut into chunks
4 cups shredded mixed greens
1/2 cup chopped celery
2 med bananas, sliced
1 cup broken pecans
1 cup halved cherry tomatoes
1/3 cup mayonnaise
1/4 cup whipping cream
2 T prepared mustard
1/4 tsp celery seed
In a mixing bowl, toss together the oranges and apples. Cover and chill.
Combine the greens and celery in lettuce-lined serving bowl. Cover and chill.
At serving time, toss fruit mixture with sliced bananas. Transfer fruit mixture with a slotted spoon to the lettuce-lined serving bowl., arranging evenly over shredded greens mixture. Sprinkle pecans atop. Arrange tomato halves on top or around the edge of bowl. Garnish with celery leaves and cherry tomato rose, if desired.
For the dressing: Combine mayonnaise, whipping cream, mustard and celery seed. Pour over fruit mixture and toss gently to coat ingredients.
