Fresh asparagus is starting to show up in the stores & hopefully I'll find a good sale on it. I'd like to can a bunch plus freeze some, but I've never canned it before or even heard of anyone doing so.
By choice, I only can using water bath NOT pressure canner & yes I know all about the risks. I guess my question would be more of.....is canning asparagus similar to green beans (easy), or more like corn or potatoes (takes a bit more processing time) or is there more to consider?
