Bahama Pigeon Peas and Rice

This is easy and affordable and hopefully will transport you to warmer thoughts during this cold winter.
I find the pigeon peas in the Mexican section of most large stores.

BAHAMA PIGEON PEAS AND RICE

2 oz butter
2 oz bacon diced (optional)
1 lg onion chopped
1 stalk celery chopped
1/2 can tomato paste
1 lg tomato chopped
1/2 small can pigeon peas with juice
1 1/2 c rice
1 2/3 c water
sprig thyme
1 tbsp ketchup
salt and pepper

Fry bacon and onion in butter till brown.
Add celery, paste, ketchup, tomatoes, thyme, s&p.
Cook 15 min, stirring and brown.
Add peas with juice, water, rice and bring to boil.
Cover and cook on low for 40 min DO NOT STIR WHILE COOKING!!!

serves 4-6

Well, the Mexican Foods section of the "large" grocery near us is definitely not Fiesta Market! (A large grocery near our old home in Tomball, Texas) :D

Could I substitute chickpeas, sylvie, or would that be too different?

I don't see why not, the taste might be similar. Maybe black eyed peas or navy beans? They look like brown peas.
I bought a bag of the dried pigeon peas and planted some to see what would happen. They looked like soybean plants, so there's that. If you experiment let us know how it turned out.
