Baked Onions

DS got this recipe from Nick Stellino's pbs show in the early 90's. Jon made it as part of an anniversary dinner he made for dh and I. It was funny watching Jon run from the living room to watch a portion of the show he taped and then back to the kitchen to work on the meal. I will post the rest of the recipes too. They are very good.

Baked Onions

Preheat oven to 400

4 Medium to Large Sweet Onions, peeled & left whole
1/4 cup Balsamic Vinegar
1/4 tsp Sea or Kosher Salt
1/8 tsp Black Pepper
1 T Butter

Put vinegar in baking dish. Place onions in baking dish. Put butter on each onion. Dash salt and pepper on onions. Heat covered with foil for 1 hour. Remove foil and bake additional 30 minutes. Serve.

That sounds great! I had a 35-lb bag of onions from a fellow market grower that I bought this fall. They're starting to think about sprouting and a person can only eat French onion soup so many times... I will try this--thanks!
