This recipe came up in conversation in my journal, as sylvie was looking for something to take to a pot luck that would be cost effective. Since I canned a number of beans last year, re-reading it reminded me that I have some jars of beans from last year that I need to use before I start canning this year's harvest. So I think this might be part of Memorial Day week-end's menu......

Bean Casserole
Serves 10-12 as main course; about 20-24 as side dish.

1 to 1 1/2# pork sausage, browned
1 can chili beans, drained
1 can baked beans, drained
1 can kidney beans, drained
1 can green beans, drained
1 can yellow wax beans, drained
1 can lima beans, drained

1 can tomato soup
2 medium onions, chopped
1 cup celery, chopped
2 T prepared mustard OR 2 tsp dry mustard
1 cup brown sugar

1 can tomato paste
1/2 to 1# uncooked bacon strips

Preheat oven to 350F

Put all beans and browned sausage in a 5 or 6 qt Dutch oven or casserole dish. Mix soup, onions, celery, mustard and brown sugar together and stir in with beans. Top with tomato paste and bacon strips.

Bake for at least 1 hour, may be baked longer.

Alternately, put everything in an electric roaster set to 350.

You could omit the meat, or substitute your favorite ground meat for the sausage. It is wonderful with thick cut homestyle bacon. Can be served hot or cold, but I like it best hot.
