Any good how-to books on butchering and processing farm animals for the table?

Not exclusive to butchering, but there's a section on it in the Back to the Basics books on Homesteading. One of the single most helpful and informative compilations on Homesteading I've ever had the pleasure to peruse.

I have one of the older ones but here's a newer one on Ebay for $2 and free shipping. You'll love these books!

I have one of the originals and one of new reprints. They are mostly the same. Just a bit updated. Lots of simple basic info.
