canning banana peppers

I canned up a jar of banana peppers in cider vinegar, but they are turning a yucky yellow gray. How do I keep their bright yellow color when I can them? I only have one plant, but hope to get another pint or two before fall. Thanks!

Hi--Not certain, but canning in cider vinegar seems like the culprit to me. My yellow beets did NOT keep their color in white vinegar, but my lemon cukes do. Have you tried white vinegar?

Thanks! I'll try the white next time. I never really considered it any good for anything except cleaning before.

Yup. I just made a batch of banana peppers and I used white vinegar. They came out great. I hope you have better luck next time!
