Ceviche for dinner!

I have found a use for the dozens of lemons in the freezer, and the excess of red salmon in the freezer!

Got to run out to the freezer and get a couple filet's out, and call DH to bring home some tomatoes and peppers.

I might bring a small dish to the get together for the Iditarod on Sunday.

I had ceviche for lunch yesterday. I think it was made with Mahi Mahi and shrimp.. My health food store make it in the deli. I think it needed a bit more cilantro. But it was yummy!!!
