cheese press question

The last step in the farmhouse cheddar recipe says to press at 50# for 12 hours. However, I wasn't paying much attention to my start time and 12 hours means it will be done at 2:30 am. What happens if I leave the cheese in the press for a few extra hours?

On another note, DH asked if I was done with the cheese. I told him my part was mostly done, we just have to wait a few weeks for it to ripen. He wasn't very happy, he wanted to try it right away. :lol: At least he's finally excited about one of my many hairbrained ideas :p

I would think it may be a bit dryer but I can't see what harm there is to getting a nights sleep and checking on it tomorrow.

Reduce it to 40 pounds. You do usually have to turn a cheese over half way through pressing.
