On a nice, dry day you can make meringue cookies by whipping the egg whites and dropping them by big spoonfuls, or piping them, onto parchment paper and baking in a very slow oven for....er.....I cannot remember, hopefully someone will chime in.

You can flavor the egg white with stevia, vanilla, a dusting of cocoa powder, anything delicate. You MUST make them on a DRY day or they get sticky!

They are so delicate and light, you can eat the entire batch guilt-free! For breakfast!

ETA: 200F for 1.5 - 2 hours, turning off the oven and letting them continue to dry overnight....just in time for breakfast!!! Here ya go: http://www.joyofbaking.com/MeringueCookies.html
