Ok, so I posted in FarmFresh's Thread
MeSSy Kitchen Klub and it got me to thinking. That plus my thread I started yesterday about
meat, egg, dairy and bakery item vendors in Kansas. I've been thinking, why can't I be a Gluten Free Vendor? I know it requires a bit of investment and such, but seriously, I am really loving this baking thing, always have, and this would be a way to indulge a passion while making money! And SO gets to taste test alot of new things

Plus, it means I'll be home to make him dinners every day, since I can use our home kitchen (at least to start!).
(for those of you lost, a few posts back I talked about why we are moving to Kansas

)
SO's soon to be new manager (currently his assistant manager) and SO asked me yesterday to do the research mentioned in the kansas vendor thread mentioned above. So I did. Which is what got me on this thinking thought

I know they don't currently have a GF fresh bakery/deli vendor, and I know I can make good breads with the mixes. But, I need to try making my own mixes (which I believe would actually save some money) and experimenting with other varieties besides white bread
And then that led to a new idea. SO and his friend D had a dream at one time about starting a small cafe type business. She would run the back end (the kitchen) and he would run the front (the customers). The thing is, we could do this still. D and I could run the back end, making sure we have double of everything so we can have actual gluten free foods and non gf, and either have SO run the front, or hire/find someone else to do it. In addition, not only would I be supplying the cafe/restaurant with GF baked goods and such, I could also supply the local VC and maybe one or two other places in the area. And use the business to promote local farms and ranches by using local, sustainable, fresh ingredients whenever and wherever possible.
I'm

and

and

but also kinda

in my head about this.
