cookies, fudge, brownies, and pumpkin bread question

I am planning some gift baskets of cookies, fudge, brownies, and pumpkin bread for gifts. If cooked today(sunday) and put in bags, will they still be fresh by wednesday evening for serving? Should I put them in the fridge? I would like to get the majority done today, got a lot of cooking to do this week. Thanks all. Oh, and Merry Christmas!!!!

Yummy Tommy sounds good to me!!

I am sure the fudge will be fine, seal it up and your good to go. The quick bread may be better if frozen then pulled out on Wed morning. Not to sure about the cookies. Maybe just ziplock them up.

Ditto on the fudge and bread. I like freezing quick breads because they seem moister when they thaw. And fudge is best at room temp, IMO. Cookies are a bit less forgiving and they start to go stale within maybe 48 hours, so depending upon the type of cookie I would freeze them airtight. Cookies with chocolate chips may not fare as well, as extreme temps causes chocolate to "bloom" or turn white in spots.

Ditto to ldychf :) Fudge will be fine--freeze the rest until you need them.
