Cornsyrup free Pecan Pie!

I haven't made pies in a long time because gluten free crusts are a pain!

This year I made a pear pie and a pecan pie.

I experimented a little and here is the recipe for the corn syrup free Pecan Pie:
2 eggs
1/2 stick butter
1 cup dark brown sugar
1/4 cup white cane sugar
1/2 tsp salt
2 cups roasted chopped pecans
To roast pecans: Put them on a cookie sheet for 5 min. in preheated 350 oven.
Let them cool off and then chop them up to medium size pieces.
Mix all the ingredients and put in pie shell.
Bake for 50-60 min. at 350.
Test filling with toothpick to see if done.

Roasting the pecans adds a great flavor.
This pie filling is not TOO sweet like the ones with corn syrup.
I probably would add another egg next time.
But I was told this was the best pecan pie my dh ever had and he is from the south!

I don't use corn syrup in mine either,..I use Maple Syrup,..YUM!

I made that recipe for thanksgiving, it was awesome!! I told my dad and stepmom about it and they were skeptical to say the least! I told them I'll make one and bring down next year when we go to North Carolina again...

DS was bummed the other day, b/c I made cocnut custard pie and apple pie, he really only wants pecan pie.

Mine prefers apple crisp to apple pie. His favourites are pecan pie, and then my dutch butter cake. sinfully deliscious. But, he ate the apple pie anyways. Next week he gets the butter cake. (he's a growing boy)

Thank you! I can't eat nuts, but I was cleaning out my parent's freezer that is living in my basement (preparing for their pig, the one that lives with my pig) and found a bag of pecans. My mom loves pecan pie but can no longer cook. Guess what they'll be getting on Tuesday....
