Okay, so I used this recipe http://www.ehow.com/how_4846338_yogurt-crock-pot.html to make yogurt in the crock pot yesterday. I may have messed it up by adding the honey BEFORE letting it sit all night. The finished product is the tiniest bit, well kinda stringy. Not a lot, just the drip that comes off the spoon when i transfer it to the small containers sorta ends in a stretchy drip. It smells amazing, but I don't want to taste it until it is cold. And until I know for sure it isn't ruined! Can you help?
Adding the honey may be what is giving you that weird texture. Next time strain your finished yogurt to thicken it (or add pectin...or use cream instead of milk). THEN add the honey once it is done.
