Depression Cake Recipe

This is the cake I turn to if I need chocolate STAT.

(It's called depression cake because supposedly it was made in the depression when eggs were rationed but we'll just pretend it's a play on words and eat it when we're bummed out.)


3 cups unbleached flour
2 cups sugar (if using maple syrup use 3/4 cup)
1/2 cup cocoa powder
2 teaspoons baking soda
1 teaspoon salt
2 teaspoons vanilla
2 tablespoons apple cider vinegar
3/4 cup melted coconut oil (or whatever oil you want to use)
2 cups water (I use milk when I'm overflowing with it)

Mix it all together and pour into UNGREASED (yah how easy is that?) 15x11 pan.

Bake at 350 for about 30 minutes. Do the cake tester trick. You do NOT want to overbake this cake.

It's incredibly moist and tastes heavenly with buttercream frosting.

Note: I like to mix up all the dry ingredients and put into a mason jar for a homemade cake mix.
