This afternoon I taught our neighbor how to make sausage with some of his pig. We made pan and link. He and his wife went to Tyler this evening and bought an electric smoker, he is all enthused now. He thought we had to shape the sausage into patties before we packed it into bags for the freezer.
I have the bacon in the refrigerator in 2 gallon zip lock bags. I did one slab in a maple cure we bought at Gander Mountain, the other slab in brown sugar and salt. I'll be processing our pig tomorrow.
