Thank you for this; it looks interesting. I have a recipe for making liquid yeast in my copy of "Mrs Beeton's Book of Household Management" (originally published in 1859; mine is a facsimile copy), which is similar to this, though the end product is bottled (and kept dark and cool, but obviously not sterilized), and wouldn't keep as long. Also, the potatoes were added to the bread dough as it is being made, and not to the yeast. Mrs Beeton's recipe always seemed to be more trouble than it was worth, in these days of active dry yeast, but this video makes me think that it might be kind of a neat experiment to try the cakes.

You're going to end up with a lot of yeast Didn't she measure out 8 or 9 cups worth of dried hops to 1 oz? And you only need a cup full for the recipe.
