eggplant slowcooker or canning recipes wanted

am up to my elbows in eggplants. am also working like crazy, so have very little time. any ideas? I don't have freezer space!

That looks like a perfectly good recipe for ratatouille. It is a wonderful summer vegetable soup. Easy to change out vegies or omit what you don't have. It is one reason I try to grow eggplant every year.
