Fermenters, help!!

A family friends' father just passed away, so hubs and I thought it would be nice to bring them over a pot of chili. ( the guy loves my chili.) However, I don' t have any presoaked and cooked kidney beans. Can I do a quick ferment to get the gas out, so that I can cook it and have it delivered tonight?

You don't just ferment it to get the gas out, you do it to deactivate the anti-nutrients naturally found in beans. Minimum soak time for that is 8 hours.

You could make him a "chili mix". All the meat and spices and instruct him to add 1 can of beans when heating up.

Yeah, I know that fermenting does more than get the gas out, but in this case that would be my main concern. Anyways, hubby just called and said thta tomorrow would be great, so now I get to soak them proper.
