Lovin' The Homestead
For all recipes: place all ingredients except chicken in a gallon ziploc bag and smush together to combine. Add in chicken. Freeze until needed. Thaw in frig. Place contents of bag in baking dish and bake @350* until juices run clear (20-30 minutes for b/s breasts, 40-60 minutes for bone-in pieces)
Alternately, put frozen contents (if they'll fit, or thaw just enough that it does fit) into crock pot in the AM, crock on low for 8ish hrs and enjoy after a hard days work.
Honey Glazed Chicken
1-1/4 cup butter, melted
1/8 cup soy sauce
1/2 cup honey
5-6 chicken pieces - anything from boneless, skinless breasts, to mixed pieces
Garlic Brown Sugar Chicken
5-6 chicken pieces - anything from boneless, skinless breasts, to mixed pieces
1 cup packed brown sugar
2/3 cup vinegar
1/4 cup Sprite
2-3 Tbsp minced garlic (or more, LOTS more )
2 Tbsp soy sauce
1 tsp cayenne pepper (I prefer not quite 1/2 tsp)
Honey Sesame Chicken
1/2 cup beer
3 Tbsp sesame seeds
3 Tbsp honey
2 Tbsp dijon mustard
1/2 tsp pepper
2 cloves garlic (or more!)
5-6 chicken pieces - anything from boneless, skinless breasts, to mixed pieces
Sticky Chicky
5-6 chicken pieces - anything from boneless, skinless breasts, to mixed pieces
2 Tbsp oil
1 Tbsp soy sauce
3 Tbsp smooth peanut butter
3 Tbsp ketchup
Notes - I haven't tried the Sticky Chicky recipe. My favorite is the Garlic Brown Sugar Chicken! Love it over mashed potatoes (or rice) with the juice spooned over, with a side of green beans or broccoli.
Anybody have a good substitute for the soy sauce, since I'm now learning that soy is bad? What about a substitute for the Sprite?
