Okay, I'm finally getting some ripe tomatoes. I have washed them, removed the stem scar and placed them on a cookie sheet and put them in the freezer to keep until I get enough to make some sauce - stored in ziplock bags of course.

Do I just put the bag in the fridge or on the counter to thaw? Do I still have to blanch them to get the peels off or will they peel just fine once they are thawed?

When I thaw mine, I usually put them in a colander to drain off the excess water, since I'm usually making sauce out of them & don't want extra water. You won't need to blanch them. Once they thaw, you'll see why: the skins slip off, and the tomatoes are pretty limp.

And you dont need to freeze them on cookie sheets. Just dump them all in a bag, and thaw them when you need them. as kate said, the peels will just slip off. Mucheasier than dipping in hot water to get the skins off.

they are only good for making into sauce or something like that if you freeze them... don't try to use them as fresh
