My first jam project!

10 peaches (boil to loosen skins), peeled and pitted
3 limes (juice and fruit of)
about 2 big fingers of fresh ginger, grated
1/2 cup water
1/2 cup honey

Cook it all together and mush well. I put 3/4 of it through the blender.
Once it is hot, add a packet of no-sugar pectin.
Let boil til it thickens some.
Scoop into jars.

Into one jar, I added a 1/2 T (8 oz jar) of Auntie's sriracha sauce. Mmmmmm!!

Two have thick slices of ginger in the bottom."

They're water bathing now. 30 minutes, cuz Colorado needs a bit extra.

This is verra exciting.

We had just enough extra to drizzle on ice cream and omg. :drool

eta: Huh!!! It said I was resigning in as abi but it LIED! I'm auntie. Bwahahahahaha!!!
 
I HAVE to make this. How much did it make?

And what is that sauce you speak of? Where do you get it?
 
It made 9 8-oz jars plus an extra couple Tablespoons to go emergently on ice cream >.>

Auntie has the sriracha somewhere, I think in this section...

You can buy it in the store but her version is MUCH more better!
 
Yeh. It was pretty phenomenal. Now to see if it fully sets up. I don't mind more of a "sauce". I didn't have a full packet of pectin ROFL. So ummmm.... I used what I had. *beams*

At worse, I have an amazing peach SAUCE. I don't mind this.
 
The combination of peach, lime and ginger was awesome. I am definitely going to make some of this. Abi opted for extra Ginger, but I think a touch of cinnamon would be da bomb!!!


Like abi mentioned, it doesn't even matter if this stuff sets up or not. It was still thick and the flavor was totally NOM!

This stuff without the pectin would make a good glaze for poultry or pork.

We both gave it an A+ as an ice cream topping.

Another way to use it would be to serve it on nut crackers smeared with cream cheese.
 
HEY ABI!!! Did your peach jam set? Tip over a jar and look :D

I have water boiling to make my batch right now. My hands smell like Ginger from grating some. Mmmmmmmmm!
 
No. But I had used a quarter of the pectin package previously. Really thick, though!
