Gluten free lemon bars Update!

Lemon bars came up in a thread the other day, and I found a gluten free recipe to try.
Was going to make them for Sunday potluck, but was out of butter.
Having company tonight, so a pan on the bars are in the oven as I type this.
They smell incredible,and my mouth is watering.

Because the recipe has a huge amount of sugar in them, I plan on making these only once or twice a year.

I used rice flour and in place of the xantham gum, I used cornstarch.
I'll let you know how they turned out.

They turned out fabulous :thumbsup
Too sugary to make more then once a year, but I can't really complain otherwise!

Yeah that sugar amount scared me, but once a year it might be worth it :D

I want to try them with honey, but I really doubt they would turn out.
Maybe coconut sugar would be an option.

I made them for company. Most of our friends have no worries about sugar :rolleyes:

That is a scary amount of sugar. I think you could easily cut the sugar in the filling in half. Or atleast cut it back by 1/3. Such experimentation would give you a terrific excuse to make them again. Of course, you should make them for Sunday Potluck so you aren't stuck eating them all if they are still way to sugary. Let us know how it goes. :pop

I made the lemon bars tonight. They turned out great. I used Bob's Red Mill flour mix and the XG.

I split the recipe into two 8 x8 pans. One for the Family and the other will go to the in laws on Easter.

Yum!!
