Posting this on my journal thread but just read the sticky about posting recipes under the self-sufficient kitchen so here goes...

Don't hate me but I really don't like to measure things!

Gluten-Free Pancakes

Take some flaxseed and grind it. Mix in a little cinnamon, coconut or almond flour, and baking powder. (Sometimes I add a little apple-pie spice and walnuts.) Beat an egg and add, then enough water to make a batter mixture. Cook like pancakes.

Delicious!

Trying to keep my son away from syrup so I put a little honey on his.

If you have any type of preserves, you can water it down a bit to make a nice fruit syrup, or just spred jam on the pancakes. :)

Here is a pancake recipe that is GAPS and SCD friendly. Its a nice recipe to throw in for variety.
I have to avoid flax cause my thyroid is still a little depressed.
Made them for my dad today, as he is trying to avoid grains for a few weeks.

1 very ripe banana
3 eggs
2 TBLS Peanut butter.
Blend very well, and make small cakes.
Serve with butter and maple syrup or honey.

Any nut butter will work!

Once you prepare the batter for your pb/banana/egg pancakes and form them, you cook like a regular pancake? Wouldn't the nut butter kinda melt?

Its just like regular pancake batter. Dip it and pour into the skillet and let it bubble up. Then flip to finish. It will look just like a real pancake.
