Going Gluten Free.....Good Resource to Get Started??

My mother was diagnosed with fibromialgya, (I think I spelt that wrong). SIL was diagnosed with auto immune problems, turned out to be celiacs. So both my inlaws were dna tested. FIL tested positive for celiacs. MIL a gene carrier. So its pretty sure my dh is a carrier.

On my side of the family we have IBS, and many other health issues that I could connect to gluten.

I had my 2 older kids tested. They both came back negative.

Not sure where to go from here. We do eat some wheat, but I use many GF products to limit the exposure.

Wifezilla, could you give me a link regarding the Agave? I need to show it to someone.
 
Does anyone know if the xanthun gum works like cornstarch as a thickener? Or more to the point like clear gel? I have the time to experiment and I just wondered if anyone else has tried alternatives to the xanthun gum? The closest Walmart to me that has it is 35 miles away and I don't want to make an order on the internet until I need more items and can save some on shipping.

DH has been gluten free and sugar free for about a month and a half. Now it's my turn, but I like the bread more. So anyone try experiments with rice flour or corn flour and a different thickener?--if that is what it does.

What type of recipes are you most interested in? I mainly just tweak regular recipes to make them GF.
 
My family is big on chicken and turkey pot pies I have switched from using pie crust to using a drop biscuit dough. I just use a regular recipie and make it a bit softer. Works great.

Not sure if you have a Big Lots but they carry the Bobs Red Mill mixes cheap. Pizza dough, cinnamon rolls etc..

I can find Bob's RedMill xanthan gum and guar gum at the grocery store easily in the GF section. Our local Ocean State Job Lot stores have tons of Bob's stuff as well, but you have to be in CT or RI for that....
Since my son is allergic to corn and rice as well I can't use some of the products out there, which eliminates most processed GF foods. I did find some mixes from a company called Breads from Anna. I don't really use the quick bread mixes since I can make those myself, but I really like their pizza and pie crust mixes. They do yeast breads as well. Not a great success in the bread machine but it will work. DS hadn't been crazy about them but last night did chow down a steak sandwich made with it.
 
Next time I'm in town I'll cruise thru the Big Lots for the boxed mixes. I had a little sticker shock at the prices of the different flours...I'm so used to cheap AP flour!!

I do have a bread maker($10 yardsale score) and will use that if I decide to make GF bread from scratch. I know it's not in the budget to buy the pre-made bread from the store.

I'm actually getting a little excited about the new foods I'm gonna make instead of being petrified about not having anything decent to eat!!
