Your safest bet is to buy evoo from California. Olives are a fruit, so technically, evoo is a fruit juice. It needs to be pressed while the fruit is fresh, and it needs to get into your hot little hands quickly. Most olive oil from Europe has arrived via slow boat; and they keep their best stuff for themselves- sending us the stuff that was pressed from fruit that was actually starting to get moldy (probably laughing in their sleeves at our gullibility).
California Olive Ranch is a good oil. They press the fruit within 8 hours of picking. I have found them both online and in a lot of grocery stores, and they are very reasonably priced.
