I have a large one that I would like to dehydrate. I'm wondering about how hard/soft it will be once dehydrated. I'm thinking long the lines of a snack--I was thinking soaking in salt water, and then dehydrating, and once it is dry, it will be a salted snack--sorta like a chip. Will they get crispy? Anyone know?

We have never done Zucchini, buy what I would do, is peal it, slice it, and sprinkle salt on it when you put it in the dehydrator.....

I have done them once, it was a smaller one and it dried crisp. I rehydrated them to use in soup.

According to my drying book it states they should not be stored for more than a month, I stored them in the fridge and some in the freezer they were fine.

Quality poor to fair according to book, mine did well.
prep: wash dry peel if desired. Cut into 1/4 to 3/8 slices, season with seasoned salt or dip in bbq sauce and dry at 140* for 1-2 hours then turn down to 130* until desired crispness is achieved.
Hope that helps!

I dehydrated mine in 2009 to use in soups and stews. After they were dry, I stored them in the freezer. I still have about 9 bags left and am still using them. Stored in the foodsaver bags with no air, they are still good and still good in soups and stews over a year later.
