Have any of you canned a smoked ham?

Last year both my wife and I received Honey-baked hams for Christmas. One of them is still taking up room in the freezer....and I have heard through the grape vine that we will be receiving the same gift this year.

I am thinking of canning a couple of them to save space and because it will keep longer.

Just wondering if any of you have ever canned ham that was previously processed by smoking or other means.

I did three of them this year. I didn't cook it first, just cut it into nice chunks, put it in pints and quarts with plain water, and processed 75 for pints and 90 for quarts. It is delicious.

The last one, I had boiled the bones from the first two to make ham stock, and used it instead of plain water. A day after canning, the stock had jelled and I tested one of the pints and WOW.

I also used bits of the ham when I canned collard and mustard greens with onions.

I wouldn't hesitate, if I were you. The best thing is that you can have ham for a meal instead of for a week !!!
