Sludge:

5 lbs of potatoes pealed and cut up to @ bite size
Boil till tinder
Drain but leave a little water on
Add 4 cans of green beans- drained
Add cooked meat of your choice ( I use sauage and bacon) my sister likes ham. My mom likes hamb.
Salt and pepper to taste

This is filling and it is even better the next day as leftovers!

We're pretty boring here, as summer is too hectic for much cooking, so here are my fast summer meals:

toast with eggs, salad
omelettes
quiche with Swiss chard and kale
taco meat with 1/3 beans and 1/3 brown rice, served over lettuce for salad
pan-fried burgers with salad
roasted chicken with available veggies
freezer pesto with whole-grain pasta
brown rice with beans and hot pepper jelly
meatloaf with currently available vegetables

Thanks everyone!!! :D Now its going to be...... looking at this thread everyday to figure out what we are cooking the next day!!!

I hear ya about summer being busy. And we dont have any central air, so the LAST thing i want to do after coming home from working outside all day is stand in my 100 degree kitchen and cook something!!!! I usually dont do TOO bad the rest of the year but come this time of year until september we eat poorly I have to admit. Especially when im canning........... my stove is full and im tired... make a sandwich.....

Oh yeah, I forgot...sandwiches :D Nothing wrong with a whole-wheat PB&J! We have nearly 1.5 acres of gorgeous organic fruits and vegetables, and it kills me that I have so little time to use them in exotic dishes. It comes down to super fast and super easy for us all summer long. But we have 3 freezers full of them for slow and leisurely use all winter :) Really, though, great vegetables stand alone and don't need much to make them special.
