HELP! Tomatoes!

My mother gave me over a dozen really big tomaotes that were going bad sitting on her table. She grew alot more than she could eat. I need a tomatoe sauce recipe ASAP! I have a pressure canner and plenty of jars- I just need a recipe and a processing time. Thanks!

Those wouldn't last two seconds here. Put a little salt on them and eat like an apple mmmmmmmmmmm

I vote for the fermented salsa too. Or you could remove the cores and freeze them whole to use when you have more. That wouldn't be enough tomatoes to make it worth canning for me.

Mmm, I've wanted to try fermenting but have never got around to it. This sounds like a great opportunity! I've got the recipe and DF thinks I've lost it. :lol:

When I am in a hurry to process my tomatoes, I simply peel and cut them up it needed, cover them with hot water and can them.
My pessure canning book says to process them at 11 pounds pressure, pints and quarts 25 minutes.
