home made buttermilk what do you think the expiration date should be?

I've got homemade buttermilk from raw milk that must be two maybe three weeks old,
it has seperated,

now when I make more I use a little of the old to make a new batch and it seems like any buttermilk over 2 weeks old doesn't produce buttermilk for me again

anyhow Ive got almost a half gallon of oldish buttermilk

best guess does it go bad or just sour more? do you suppose it can still be used?

Buttermilk is the one thing I use wayyy past the use by date, and I have raw right now too that is about a month old. Still good.

you see, it doesn't smell bad really, like bad bad bad,
but it doesn't smell buttery good, it just smells more like cheese,(not stinky blue cheese just cheese, ) or old socks or feet, sort of ripe and old, not rancid....it's had a lid on it this whole time,

but I am thinking cause the color is good, it is probably just more sour,

does that make sense

makes perfect sense. I use it like that. It makes the bestest buttermilk biscuits ;)

LOVE it in pancakes made with duck eggs :drool

That was the secret ingredient of my grandma's famous buttermilk biscuits. She used to to say the secret was to put your buttermilk in the back of the fridge and forget about it for a month, that's when it makes the best biscuits!
