Here are the photos of how my Honeysuckle Jelly turned out.

Here are some jars before the lids went on.

Here are some flowers in the jar.

Here they are taken with a flash, it shows the color of the jelly.

I was sort of disappointed that the jelly didn't really taste like the fragrance of Honeysuckle. Obviously the heat changes it. It has a very pleasant flavor, just not what I expected. I make a sort of "tea" from the flowers, only I use cold water. It is wonderful! Just like the flower smells.

I do want to try Apple Rosemary. Or maybe Apple Sage and Apple Mint, or maybe Apple Thyme would be good. I have a few Lemon Thyme plants.

That looks wonderful. A recipe in the recipe section would be really great since I have tons of honeysuckle.

Do the honeysuckle flowers need to be fresh for the tea?
Is it something that could be dried?

I would like the recipe too. I hope it has some honeysuckle flavor, but I know what you mean. I made lemon balm jelly and it turned out OK, but it just tasted sweet.

That jelly sounds luscious! I have done something similar with rose geranium leaves, and also with lemon verbena. I make apple jelly, and put a leaf or two in the jar before putting the lid on. The apple goes well with the other flavors, and there is no cooking of the leaves involved.

How many flowers do you use for a mug of 'tea'?

Check out the honeysuckle jelly recipe on TEG.

Edited because I forgot to add the link.
That is pretty much the recipe I used. I got the idea from that link on TEG.

I used about 6 cups of flowers, removing the tiny green end and the largest stamen. That is the most time consuming part of it.

If I do any other herb or flower jellies, I think I will put the herbs or flowers in the hot syrup at the time of putting on the lids. I don't think the heat works very well in keep the flavors. At least not with the honeysuckle.
