How to make Italian sausage from breakfast sausage

Hello everyone! It's been forever...
I found this recipe some months ago and it's a keeper for me. Ground Italian sausage is $6 a pound around here, but I can get some regular sausage at Aldi's for $1.99 a pound that has hardly any fat and really good flavor.

To your pound of breakfast sausage, add:

1 tsp fennel seeds (this is absolutely imperative, this is what makes it Italian sausage)
1 tsp dried basil
1 tsp dried oregano
1 tsp garlic powder
1 tsp dried parsley
1/2 tsp onion powder
1/2 tsp dried rosemary
1/2 tsp black pepper
pinch of red pepper flakes (more if you like it hot)

That's it. Mix it up to use immediately or let it sit in the frig for a couple hours to help blend the flavors.

@Marianne can this recipe also be used on fresh ground pork?

Welcome back, what took you so long to come meandering back? LOL
I've never tried it on fresh pork, but I bet it would. But I'm guessing you'd have to add more of the spices. I have a Jimmy Dean sausage copycat recipe that I'll post, too.

And I'm glad that you're still here!

Thanks Marianne. I think Bkfst and Italian sausage are the same price where I shop. Now, I gotta check that out. I can buy my spices bulk, so hardly any cost involved in the spices.
